For those of you who know me well, you would already be aware that I cannot cook to save my life! From making soups which resemble ocean-like saltiness to transforming toast into a carcinogenic piece of charcoal, I think it’s safe to say the kitchen is just not my area of expertise… Being vegan, people often assume this means awesome cook. I’m here to tell you, this is not always the case!
Whilst I’m very conscious of eating clean, something close family and friends also know I’m a massive sweet tooth. Cookies, bubblegum, sherbet… Lolly shops are my kryptonite - so I tend to keep away as much as possible!
There is, however, a happy place I’ve recently come to with my skills in the cooking world and my love of sugar (because everyone needs to enjoy these yummy things in life once in awhile I say!) Turns out I can successfully bake vegan gingerbread, and it’s surprisingly edible!!! In fact, not only is it edible but it’s crazy awesome, and whilst people are hesitant to try my cookies at first, once they’ve had one they’re hooked! Go me!!
So, I thought I would share this incredible recipe with you also. You can feel confident you will be successful with baking them if I can make them taste good!! But please don’t blame me when you get addicted to them…
